Sugar & Spiced Pecans

This was a favorite recipe of Kelly’s mother Mary.  It’s great for the holiday season but Kelly usually doubles the recipe to have enough to last throughout the season. 

1 lb         Pecan halves                         1/2 tsp    Vanilla extract

1 cup      Sugar                                      1 tbsp     Water

1 tsp       Cinnamon                              1              Egg white

3/4 tsp   Salt

Directions:  Combine egg white and water.  Beat until frothy but not stiff.  Add sugar, cinnamon, salt, vanilla and mix well.  Add nuts and stir until evenly coated.  Spread onto cookie sheet after spraying with Pam.  Bake 45 minutes at 300 degrees.  Turn the nuts every 15 minutes with a spatula.  Let cool and store in an air tight container.
